Date information on the products expresses the production date, production time and expiry date of fruit juices. According to the Turkish Food Codex Labelling Communiqué, it is mandatory to write the expiry dates on the labels of all foods including fruit juices.

For a long shelf life, microorganisms which cause deterioration of the fruit juices must be killed and then packaged so as not to be contaminated with microorganisms. For the microorganisms to die, fruit juice is kept at 95-99° C for 30-60 sec., immediately after it is cooled at 20 ° C, and sealed in an aseptic compart-ment upon filling in sterile packaging. Protection effect continues as long as the packaging is not opened. However, since there is no preservative additives included, there will be deterioration after a while fol-lowing the opening of the package.

As the production and harvest time of the fruits are different, not all fruits are available in all seasons. To meet consumers' fruit juice demand throughout the year, the juice of the fruits is extracted by preserv-ing the naturalness of the fruits and concentrate is obtained. Thus, it is kept healthily without being spoilt. Water is added to the juice obtained from the concentrate, in the amount separated during the process, in a sensory, microbiological and chemically appropriate manner and in accordance with the Regulation on Water for Human Consumption, so as not to affect the quality of the fruit juice.

Fruit-derived beverages are divided into four main categories according to the fruit content they contain. These are fruit juice, fruit nectar, fruit beverage and aromatic beverage according to the order of close-ness to fruit. Fruit juice totally consists of fruit and is of 100% fruit ratio according to Turkish Food Codex. The product group which is diluted with a certain amount of water and of which taste balance distorted with water is restored with the help of such substances as sugar is called fruit nectar. Their fruit ratio var-ies from 25% to 99% depending on the fruit.

No substances used in fruit juices are carcinogenic. The dosage of the additives we use is used in such a way that it does not have any negative characteristics in terms of health, in accordance with the values specified in the international health organizations and Turkish food regulations.

Since our fruit juice varieties are additive-free, they can be spoilt and molded after a certain period of time when they are left in room temperature.

Products of which shelf-life ended must not be consumed. In the event that shelf life ended, fruit juices may be spoiled; its colour, taste and smell may become undesirable.
